Recipe: The classic Bobotie

We love her bobotie recipe, which will go brilliantly served with rice or a big green salad accompanied by small bowls of desiccated or dried coconut, chutney and banana slices.

Every South African has to try this dish at least once.

Ingredients

.?2 slices white or brown bread

.?250ml milk

.?A dash of oil

.?1/2 onion, chopped

.?2cm ginger, crushed

.?1 clove garlic, crushed

.?5ml medium curry powder

.?5ml turmeric

.?500g-600g mince

.?5ml salt

.?A handful of raisins or quartered dried apricots (optional)

.?A few bay leaves or fresh

lemon leaves

.?2 eggs

Method

1.?Preheat the oven to 180°C.

2.?Place the bread in a cereal bowl and pour half the milk over it.

3.?Heat up the oil in a big pot, then fry onion for two minutes before adding the ginger and garlic.

4.?When browned, add the curry powder and turmeric, and stir for a minute before adding the mince.

5.?Brown the mince all over, stirring it with a big fork, if you have one, or a wooden spoon.

6.?When browned, remove from heat and add bread-and-milk mixture, and mix well until you can’t see the bread.

7.?Season with salt and add the raisins now if you decide to use them.

8.?Grease a lasagne dish and spoon the mince mixture inside. Stick the bay or lemon leaves into the mince, letting them poke out.

9.?In a small jug, combine remaining milk with the eggs, season and whisk well. Pour over the mince and bake for 30 to 40 minutes until browned.
