Chicken Parmesan with creamy tomato sauce

(Serves two)


.?1/4 cup cubed bacon

.?1 clove garlic, chopped

.?1 can whole tomatoes

.?1/2 tsp origanum

.?1/4 tsp thyme

.?1/4 tsp rosemary

.?1/2 tsp salt

.?1/4 cup red wine

.?1/4 cup heavy cream (could replace with yogurt)

.?2 chicken breasts, sliced in half lengthwise

.?3/4 cup mozzarella, shredded

.?1/4 cup parmesan, grated

.?Parsley for garnish

1. In a large pot, cook the bacon until slightly crisp over medium heat. Add garlic and stir until fragrant. Add the tomatoes. Add seasonings and wine. Cover with lid and cook for 20 minutes.

2. Turn heat down slightly to simmer gently. Add cream/yogurt and stir. Press chicken into the sauce, cover pot with the lid and cook for another 15?minutes.

3. Turn your oven on. Remove the lid, cover the chicken breasts with the cheeses and bake for five to six ­minutes or until the cheese is melted and slightly brown.

4. Plate the chicken with a parsley garnish and serve with pasta and fresh vegetables like steamed broccoli.
