Baked fish

In the mood for something fishy?

Serves 6

Preparation time: 10 min

Cooking time: 40 min

25 g butter

1 onion, finely chopped

3 garlic cloves

600 g potatoes, peeled and cubed

410 g (1 can) chopped tomatoes

250 ml (1c) chicken stock

200 g pitted olives

1 kg hake, cubed

handful coriander, chopped

1    Preheat the oven to 180 °C. Melt the butter in a large roasting pan over medium heat. Cook the onion for 5 minutes, add the garlic and potatoes and mix well with the onion.

2    Stir in the tomatoes and pour over the stock and olives. Place in the oven for 20 minutes or until the potatoes are cooked.

3    Add the fish to the roasting pan, spoon over some of the liquid and return to the oven for 10 minutes. Sprinkle with the coriander and serve.
