Beef and cabbage stir-fry

This is one of the easiest and tasty stir-fries I have ever made. Great meal idea when you don’t have much time as it done in 30 minutes.

Preparation time: 10 min

Cooking time: 15-20 min

Serves: 4-6

You will need

375 g boneless beef, cut into strips

125 ml (½ cup) barbecue sauce

45 ml (3 tbsp) oil

1 onion, sliced

3 garlic cloves, thinly sliced

5 cm piece ginger root, finely chopped

¼ butternut or 3 large carrots, peeled and cut into strips

½ red cabbage, shredded

½ green cabbage, shredded

1 each green and yellow peppers

1 bunch spring onions, thinly sliced

Serve with

Rice noodles or spaghetti (optional)

Method

1.    Marinade the meat in the barbecue sauce by leaving it in the fridge for 10 to 15 minutes. Drain and reserve the sauce. Heat the oil in a large frying pan or wok and stir-fry the meat with half the sauce for 6 minutes over high heat until golden brown.

2.    Add the onion, garlic and ginger and stir-fry for 2 minutes. Add the rest of the ingredients and stir-fry for 6 minutes. Stir in the rest of the barbeque sauce and season with salt and pepper to taste. Serve with rice noodles or spaghetti if desired
