Beef strips with cheesy nachos

15 ml (1 t) oil

1 red onion, sliced

500 g beef strips

2 ml (½ t) chilli powder

2 ml (½ t) paprika

2 ml (½ t) ground cumin

2 ml (½ t) dried chilli flakes

salt and pepper

1 can (400 g) Mexican-style chopped tomatoes

1 can (400 g) red kidney beans

nacho chips

125 ml (½ c) grated Cheddar cheese

1 avocado, mashed

handful of fresh coriander, chopped

1        Heat the oil in a large saucepan and sauté the onion until translucent. Add the beef and sauté until well browned. Add the chilli powder, paprika, cumin, chilli flakes, salt and pepper. Stir to combine well.

2        Add the tomatoes and beans and reduce the heat to low. Simmer for 10 minutes.

3        Put a layer of nachos on a heatproof platter and spoon the beef on top. Sprinkle the cheese over and microwave on high for 30 seconds or until the cheese has melted. Serve top with mashed avocado and chopped coriander.
