Brussels sprouts

Never enjoyed Brussels sprouts before? Here’s the recipe that could change your perception about the lowly miniature cabbage.

Serves: 6

Preparation: 15 min

Cooking: 30 min

2 slices thick bread

100 g bacon, chopped

1 onion, finely chopped

2 cloves garlic, smashed

2 sprigs thyme

60 ml (¼ c) chicken stock

30 ml (2 T) olive oil

500 g Brussels sprouts

salt and pepper

handful pecorino cheese, grated

Preheat oven to 200°C.

  1. Tear the bread into pieces. In a pan over medium heat fry bacon until crisp. Add the onion, garlic and thyme and cook for a minute. Pour in the stock, add the bread and coat with the mixture; set aside.
  2. In a pan with oil over medium heat cook the Brussels sprouts until slightly browned.
  3. Mix the sprouts with the bread mixture in an ovenproof dish. Season, sprinkle cheese over and bake for 15 minutes or until Brussels sprouts are soft.
