Cauliflower salad

Easy, healthy and filling.

2 head cauliflower

½ cucumbers, slice length way

4 spring onions

2 tomatoes

2 handfuls parsley, chopped

Handful mint leaves, chopped

1 lemon, juiced

125 ml (½ c) olive oil

Salt and pepper

  1. In a large bowl grate all the cauliflower. Deseed the cucumber and slice.
  2. Chop onion and tomato and mix with parsley, and mint.
  3. Add lemon juice, olive oil, salt, and pepper. Mix well, taste, and adjust seasoning and olive oil.
