Charred chicken with red peppers

6 chicken pieces (thighs and drumsticks)

15 ml (1 T) olive oil

2 garlic cloves, finely chopped

juice and zest of 1 lemon

2,5 ml (½ t) ground fennel

2,5 ml (½ t) paprika

handful parsley, chopped

salt and pepper

4 red peppers

  1. Place the chicken in a bowl with olive oil, garlic, lemon juice and zest, fennel and paprika. Add parsley. Season to taste with salt and pepper and mix until the chicken is evenly coated. Set aside.
  2. Preheat a non-stick barbecue or chargrill pan over high heat. Add the peppers and chicken. Grill the chicken for 10 minutes on each side or until cooked through. Grill the peppers until lightly charred and softened. Remove chicken and peppers from heat and serve on a large platter.
