Cheesy fish pie

(Serves 4)

You'll need:

  • 250 g hake
  • 250 g smoked haddock
  • 125 g prawns; shelled and uncooked
  • 1 carrot
  • 1 stick celery
  • 100 ml parsley; chopped
  • 1 small chilli; chopped (optional)
  • Salt and pepper to taste
  • 125 ml cream
  • 1 heaped tbsp. flour
  • Juice of 1 lemon
  • 500 g potatoes
  • 125 g butternut
  • 225 g Fairview Erik's Selection Mature Goat's Gouda; grated
  • Butter
  • Milk

Make sure the fish is cut into small chunks with all bones and skin removed. Toss the fish and prawns into a plastic bag with the flour and shake well.

Season with salt and pepper, then drizzle the lemon juice over it. Grate the carrot, celery and 125 g of the Mature Goat's Gouda over the top, add the parsley, chilli and cream and set aside. In a pot of salted water, cook the butternut and potatoes until soft. Mash with a potato masher, then add the butter, milk and season. Stir in the remaining 100 g of Gouda. Spoon the mixture over the fish, then bake in the oven for 40 - 45 min. until golden brown and bubbly.
