Chocolate muffin

This chocolate filled muffins are a must make

300g dark chocolate, chopped and extra to drizzle

125g butter, roughly chopped

450 ml (1 ¾ c) self-raising flour

2, 5 ml (½ t) baking powder

60 ml (¼ c) cocoa powder

60 ml (¼ c) brown sugar

180 ml (¾ c) milk

2 eggs

80g chocolate bars, sliced

Preheat oven to 180°C.

  1. Grease a 6-hole jumbo muffin pan. Place half the chocolate and the butter in a bowl over a pan of gently simmering water and stir occasionally until melted. Set aside to cool slightly.
  2. Sift flour, baking powder and cocoa into a large bowl and stir in sugar. In a separate bowl, whisk together milk and eggs, then add to dry ingredients and stir in along with chocolate mixture.
  3. Divide between muffin pans and bake for 20 minutes or until risen and cooked through. Remove and cool on a wire rack.
  4. Place a little chocolate on the chocolate bar slices, then pile onto muffins. Drizzle with extra melted chocolate.
