Cinnamon and ginger squares

An effortless tasty sweet treat that’s a must to try out

250 g butter

160 ml (? c) castor sugar

250 ml (1 c) self-raising flour

250 ml (1 c) flour

7 ml (1½ t) ginger

5 ml (1 t) cinnamon

Topping

80 ml (? c) golden syrup

375 ml (1½ c) icing sugar

100 g butter

Preheat the oven to 180 °C. Grease a 19 x19 cm pan.

1. In a bowl rub the butter, castor sugar, flours and spices together until it has the consistency of breadcrumbs.

2. Press the mixture into a pan and bake for 20 minutes.

3. Topping:  In a pot heat the golden syrup, icing sugar and butter, stirring until bubbly. Pour over the base and set in the fridge for 2 hours. Then cut into bars.
