Delicious Beans & Lentils

You will need

Lentils

250 ml (1 cup) green lentils, soaked

Pinch of salt

1 bay leaf

1 onion, halved

1 clove garlic, halved

Dressing

60 ml (¼ cup) sour cream

1 clove garlic, crushed

30 ml (2 tbsp) light mayonnaise

5 ml (1 tsp) mustard powder (optional)

15 ml (1 tbsp) canola or olive oil

Juice of ½ lemon

60 ml (4 tbsp) milk or water

Salt and freshly ground black pepper to taste

Salad

125 ml (½ cup) cherry tomatoes,halved

170 g x 2 (2 cans) tuna chunks in brine

1 packet cos lettuce or mixed salad leaves

410 g (1 can) baked beans

1 ciabatta loaf, cut into chunks

Method

1. LentiLs Place the lentil ingredients in a pot, adding enough water to cover. Cook for 15-25 minutes until lentils are done. Drain and discard the other ingredients. 2. Dressing Mix the dressing ingredients together and place in the fridge until needed. 3. saLaD Place the salad ingredients together in a large salad bowl, ending with the lentils and beans. Toss well and serve with the chilled dressing.
