Easy Toasted Sandwiches

Here’s a new, delicious way to make this classic after-school snack – for both adults and kids to enjoy

Serves 4

Preparation time: 10-15 min

Cooking time: 5 min

You'll need:

8-10 slices of bread

100 g Cheddar cheese, grated

100 g mozzarella cheese, grated

50 g blue or Gruyère cheese, grated

1 egg, whisked

1 small onion, chopped

30 ml (2 T) wholegrain mustard

100 g spinach, chopped

2 cans (175 g each) tuna, drained

Preheat the oven to 200 ºC. Grease a baking sheet with oil. Arrange the bread on the baking sheet. In a bowl mix the cheeses, egg, onion, mustard, spinach and tuna and spoon the topping on the bread. Bake for about 10 minutes or until the topping is golden brown and melted.

Mix 250 ml (1 c) grated cheese with 100-150 ml tomato sauce. Slice roast meat and arrange on slices of bread. Top with sliced salami and the cheese mixture. Bake at 180 ºC for 10-15 minutes. Flake smoked snoek and stir in natural yoghurt and chopped gherkins. Serve on slices of bread.
