Comedian Tumi Morake makes rice pudding with mango purée with Zandi Nhlapo

Nobody can resist this fruity dessert cooked with first lady of South African comedy Tumi Morake.

Preparation Time: 15 mins

Cooking Time: 30 mins

Chilling Time: 40 mins

Serves: 4-6

250 ml (1 cup) Spekko Pure White Rice

1 L (4 cups) water

500 ml (2 cups) milk

125 ml (½ cup) sugar

2 eggs yolks

5 ml (1tsp) vanilla essence

125 ml (½ cup) pecan or walnuts, chopped

60 ml (¼ cup) sultanas or raisins

2 mangoes, peeled and diced

45 ml (3tbsps) orange juice

5 ml (1tsp) orange rind

Extra nuts and mint leaves for garnish

1 Cook the Spekko Pure White Rice in water for 20 minutes, until all the water is absorbed and the rice is cooked through

2 Add the milk and sugar and simmer whilst stirring frequently until the mixture has thickened to a creamy consistency.

3 Beat the egg yolk and vanilla together and spoon 45 ml (3 tbsps) of the rice mixture into the egg mixture. Mix together and stir the mixture back into the bot of rice mixture. Stir and simmer for a further 5 minutes.

4 Remove the mixture from the heat and stir in the nuts and sultanas. Blend the mango with the orange juice and rind to form a smooth mixture and pass through a sieve.

5 Spoon the rice mixture into individual serving glass and top with a spoonful of the mango puree. Refrigerate for 30-40 minutes until chilled and garnish with chopped nuts and mint leaves.

Spekko kitchen tips: If fresh mango is unavailable substitute with the tinned version or any variety of fresh, frozen or canned fruit can be used that is to your liking.
