Episode 9: Jabu Hlongwane - Calamari on Spinach rice

Gospel singer Jabu Hlongwane is in the kitchen with Zandi Nhlapo. The singer makes calamari on spinach rice

30 ml (2 tbsp) olive oil

1 onion, chopped

2 garlic cloves, crushed

2, 5 ml (½ tsp) ground coriander

10 ml (2 tsp) paprika

300 g frozen calamari rings, thawed

125 ml (½ cup) plain yoghurt or Maas

80 ml (? cup) cream

5 ml (1 tsp) cayenne pepper

Salt and pepper

Spinach rice

½ bunch spinach, finely chopped

30 ml (2 tbsp) butter

500 ml (2 cup) Spekko Saman White Rice, cooked

Salt and pepper

Parmesan cheese, shaved to garnish

  1. Heat oil in a pan and fry onion and garlic until soft. Add coriander, paprika and calamari, stir-fry for 1 minute.
  2. Remove from heat and stir in yoghurt, cream and cayenne pepper. Season to taste. Return the pan to heat, simmer for a minute. If too dry add little yoghurt or cream.
  3. Spinach rice, in a large pan sauté spinach in melted butter until wilted. Add cooked Spekko Rice, toss lightly to mix through. Season with salt and pepper.

Tip:

  • Replace frozen calamari with frozen fish of your choice.
  • Use any Spekko rice variant in this dish.
