Do you and your family love hamburgers, but you want to try an exciting new twist on this old classic? Try this delicious Checkers recipe and get the kids to give you a hand in the kitchen.

Fairview Blue Rock cheese and bacon burger

Serves 4

For the patties you’ll need:

1 small onion; finely diced

1 tbsp. fresh thyme leaves

1 tbsp. ground coriander

500 g extra lean beef mince

½ cup fresh breadcrumbs

1 egg; beaten

Salt and freshly ground black pepper

Olive oil; for frying

You will also need:

8 - 12 rashers smoked streaky bacon

4 crusty rolls

4 large gherkins; sliced

2 baby gem lettuces; shredded

1 wedge Fairview Blue Rock cheese

Mix the patty ingredients together and season. Shape mixture into 4 patties and refrigerate for 30 min. until firm. Chargrill or pan-fry the patties and bacon until cooked to your liking. Place the lettuce, gherkins and patties onto the rolls, top with crispy bacon and crumbled Fairview Blue Rock cheese and serve with crispy potato wedges or chips.
