Leg of lamb with herb butter

This leg of lamb is fragrant with herbs, and the veggies make it even tastier.

Cooking time: 1 hour, 40 min

Serves 6-8

YOU WILL NEED

POTATOES

6-8 floury potatoes

1 onion, cut into wedges

salt and ground black pepper

625 ml (2½ cups) vegetable

stock

MEAT

5 cloves garlic, crushed

15 ml (1 tbsp) chopped thyme

10 ml (2 tsp) chopped rosemary

100 g butter at room

temperature (plus extra)

1 leg of lamb, about 2,5 kg

ROASTED VEGGIES

1,5 kg sweet potatoes, cut into wedges

1 butternut, cut into chunks

10 whole cloves garlic, peeled and roughly chopped

salt and black pepper
