This fruity layered jelly will get your children excite about eating fruit. It’s a healthy treat for the whole family.

Preparation time: 10 min

Chilling time: about 2 hours

Serves: 4-6

Fruit mixture

  • 3 each dried pears, peaches and apple rings
  • 125 ml (about 8) strawberries, washed, plus extra chopped
  • 2 each red apples and ripe bananas
  • 250 ml (1 cup) strawberry yoghurt
  • 10 ml (2 tsp) gelatine powder
  • 30 ml (2 tbsp) boiling water

Place the dried fruits, strawberries, apples and bananas in a food processor and blend until smooth. Add the yoghurt and mix well. Place the water in a large bowl, sprinkle the gelatine over and leave until dissolved and spongy. Reheat the gelatine mixture in the microwave for 30 seconds, then add the fruit mixture and whisk until well-combined. Pour into 6 cups and chill until set.

Layers

  • 1 each raspberry, lemon and greengage jelly powder, dissolved separately according to packet instructions
  • 250 ml (1 cup) custard
  • Extra fruit slices to garnish

Pour a jelly layer on top of the set fruit mixture. Chill in the fridge until set. Pour a layer of custard over, top with fruit and serve.

Top tip

Replace the fresh fruit with 500 ml (2 cups) fruit yoghurt with 15 ml (1 T) mixed with gelatine dissolved in 30 ml (2 T) hot water and chill. Then add jelly and custard layers.
