Chocolate and sweets don’t have to be your first (or only) choice when the craving for a sweet treat hits. Muesli and fruit bars are a healthy alternative for kids and moms alike.

  • 2-3 apples, peeled, cored and cut into wedges
  • 60 ml (4 T) soft dark brown sugar
  • 100 g almonds, roughly chopped
  • 100 g soft dry apricots, finely chopped
  • 80 g seedless raisins or sultanas, chopped
  • 200 ml oats
  • 200 ml whole-wheat flour
  • 5 ml (1 t) baking powder
  • 30 ml (2 T) oil
  • 1 egg, whisked

Put the apples in a saucepan with a little water and bring to the boil. Cover and simmer until the apples are very soft. Drain and purée. Stir in the brown sugar and leave to cool.

Preheat oven to 180 °C and line a greased 18 cm cake tin with baking paper. Grease again. Combine almonds, apricots, raisins or sultanas, oats, flour and baking powder. Measure the apple purée and mix 250 ml (1 c) purée with the oil and egg. Beat well and add to dry ingredients. Mix well and spoon into prepared tin, spreading evenly. Bake for 40 minutes. Leave to cool and cut into bars.
