Green bean salad

This simple salad looks impressive and is tasty.

700 g green beans, trimmed

2 oranges, peeled

60 ml (¼ c) olive oil

100 g bacon pieces

2 red onions, thinly sliced

15 ml (1 T) balsamic vinegar

15 ml (1 T) brown sugar

  1. Bring a large saucepan of salted water to the boil over high heat. Cook beans for 3 minutes or until bright green and just tender. Drain. Refresh under cold running water. Drain and set aside.
  2. Squeeze the juice from one orange into a bowl. Peel the other orange and break into segments, which you’ll use whole.
  3. Heat oil in a frying pan over medium high heat. Add bacon and onion. Cook for 5 minutes or until golden. Transfer to a bowl. Add vinegar, sugar and the orange juice that you’ve squeezed out to a pan. Cook, stirring, for 2 minutes or until mixture starts to boil. Remove from heat.
  4. Add beans and orange segments to onion. Season with salt and pepper. Toss to combine. Place on a serving platter. Drizzle with vinegar mixture.
