A great but simple meal for a week night

300 g dried green split peas, rinsed

1 onion, chopped

1 carrot, chopped

2 potatoes, cubed

2 bay leaves

250 g bacon, diced

a handful of parsley leaves

crusty bread, to serve

  1. Place the split peas, onion, carrot, potato, bay leaves and bacon in a pan. Add enough water to cover, bring to the boil then simmer over low heat for 1 hour, stirring occasionally, until the peas start to break down.
  2. Discard the bay leaves. Ladle into bowls and garnish with the parsley leaves. Serve with bread.
