Hearty boerewors pot

A hearty meal for the cold days

Serves 6

Preparation time: 5 min

Cooking time: 45 min

500 g boerewors

1 large onion, sliced

10 ml (2 t) oil

5 ml (1 t) cumin

5 ml (1 t) paprika

15 ml (1 T) turmeric

5 ml (1 t) crushed garlic

15 ml (1 T) tomato paste

410 g (1 tin) whole tomatoes

250 ml (1 c) beef stock

2 bay leaves

maize meal pap to serve

1        In a dry saucepan over a medium heat brown the boerewors on all sides and remove from the pot. In the same pot add the onion, cumin, paprika and turmeric and sauté until the onion is soft.

2        Stir in the garlic, tomato paste, tomatoes, beef stock and bay leaves and simmer for 20 minutes. Return the boerewors to the pot and simmer for another 10 minutes or until the wors is cooked. Serve with the pap.
