Jam cookies

Theses cookies are great because they require a few ingredients you’re likely to already have in your cupboard.

Makes: 25

Preparation time: 10 min

Cooking time: 15 min

125 g butter, at room temperature

125 ml (½ c) oil

125 ml (½ c) brown sugar

3 egg yolks

30 ml (2 T) milk

7 ml (1½ t) vanilla essence

pinch salt

500 ml (2 c) flour

icing sugar, for rolling

125 ml (½ c) jam

Preheat oven to180 °C. Line two cookie sheets with baking paper.

1. Cream together the butter, oil and brown sugar until fluffy. Scrape down sides of bowl. Add the

egg yolks, milk, vanilla and salt, and beat until well combined. Gradually add the flour, mixing until

well blended.

2. Measure about 2 teaspoons of dough for each cookie and roll into balls. Place the icing sugar

in a small bowl and roll the balls of dough in the sugar to coat. Using the back of a teaspoon or

your thumb, make a deep rounded hole in the top of each cookie.

3. Bake for 10 minutes, then remove from oven. It may be necessary to create the hole once

again with a spoon. Place about 1 teaspoon jam into the hole of each cookie.

4. Bake again for 5 minutes, or until lightly browned. Remove from oven. Cool on the baking

sheets for 5 minutes, then transfer to a wire rack to cool completely.
