Kale sandwich

Kale makes a mean sandwich, try it out.

20g butter

4 slices bread

1 clove garlic, sliced

30 ml (2 T) olive oil

1 spring onion, sliced

2 handfuls kale

Salt and pepper

200g mozzarella cheese

  1. Heat a pan over medium heat. Divide butter evenly between the four slices of bread, spread thinly on one side of each slice.
  2. In a medium pan, heat oil over medium-high heat, add the garlic and spring onion. Add kale, salt and pepper, and cook for few minutes, until wilted and most of the moisture is cooked out.
  3. Assemble the sandwiches by placing two slices of bread butter side-down on pan, add one slice of cheese to each, then divide the kale mixture in half and place half on each slice. Top with the remaining 2 slices of cheese and slices of bread, butter side-up. Flip after 3 minutes, then cook on the other side for 3 minutes.
