Kick-start dried fruit compote

Rev up your morning with a yummy dried-fruit salad and yoghurt.

Serves: 4-6

Preparation: 5 min

Cooking: 30 min

Chilling: 30 min

500 ml (2 c) red wine

80 ml (? c) sugar

1 cinnamon stick

2 star anise

1 ml (¼ t) vanilla seeds

16 dried prunes, pitted

16 dried figs

16 dried apricots

60 ml (¼ cup) cranberries

plain yoghurt

1. Bring wine, 250 ml (1 c) water, sugar, cinnamon stick, star anise and vanilla seeds to a boil in large saucepan. Add prunes, figs, apricots and cranberries and bring to a gentle simmer for 30 minutes.

2. Cool, remove cinnamon stick and star anise and chill for 30 minutes. Serve over plain yoghurt.
