Why not surprise your kids with a little something special in their lunchboxes today?  The Checkers in-house Giggling Gourmet, Jenny Morris, tells you how.

Chocolate muesli clusters

“You can make these chocolate clusters as big or small as you want; choose a paper case in the appropriate size,” says Jenny.

Ingredients

  • 250 g dark or milk chocolate
  • 100 g muesli or roughly chopped shortbread biscuits
  • 100 g chopped toasted almonds or peanuts
  • 100 g chopped glacé cherries
  • 30 g lightly toasted desiccated coconut
  • Pretty paper cases in red or pink, or if you’re lucky to find them with little hearts on them

Garnish

  • glacé cherry quarters
  • icing sugar for dusting

Place the chocolate in a heatproof bowl over a gently simmering pot of water; make sure the bottom of the bowl doesn't touch the water. Melt the chocolate and once it’s melted stir in the remaining ingredients. Remove the bowl from the heat and let the mixture cool slightly.

Spoon into the paper cases, press cherry quarters on the top of each one and dust with icing sugar.

Pack into your child’s lunchbox – and remember to keep one for the cook!
