  • Serves four

For the sauce you’ll need:

  • 1 red onion; very thinly sliced
  • 3 tbsp. mayonnaise
  • 2 tbsp. sweet chilli sauce
  • 1 tbsp. coriander; chopped
  • 1 clove garlic; finely crushed.

First make the sauce so that the flavours can develop. Let it stand for 30 min. Place red onion in a bowl and lighly salt. Let them stand for 8 min. then stir in the remaining ingredients.

For the burgers you’ll need:

  • 8 Championship Burger patties
  • A little olive oil for frying
  • 4 burger buns; split and pan-toasted for extra texture
  • 100 g cream cheese with spring onions or chives
  • 50 g rocket
  • 50 g mixed lettuce leaves
  • Sliced tomato
  • Cucumber ribbons
  • 4 wooden satay sticks

Heat a non-stick frying pan, add a little olive oil and swirl to coat the pan. Fry the patties in batches until cooked the way you like them, but don’t over cook. Keep warm. Smear the cream cheese onto the buns. Mix together rocket and lettuce and place onto the base of each bun, top with a patty and sliced tomato, spoon over some sauce, top with another patty, cucumber ribbons and sauce and cover with the top of the bun. Secure with a satay stick. Serve with crispy golden potato wedges. Tip: For the ladies’ version, use 1 patty per lady.
