Marinated chicken

Try this yummy marinade idea

10 garlic cloves, chopped

2 red chillies, sliced

2 cm ginger, finely grated

125 ml (½ t) olive oil

80 ml (? c) soy sauce

60 ml (¼ c) apple cider vinegar

60 ml (¼ cup) sugar

salt and pepper

2 lemons, sliced

8 chicken thighs

parsley to garnish

Preheat oven to 200 °C.

  1. Whisk garlic, chillies, ginger, oil, soy sauce, vinegar, sugar, salt and pepper in a medium bowl until sugar and salt dissolve. Add lemon slices. Place marinade and chicken in a large bowl. Turn to coat, cover and chill for at least 1 hour.
  2. Remove chicken from marinade, shaking off excess, and place, skin side up, on a greased baking sheet. Roast until cooked through – about 30 minutes.
