Microwave chicken sausage with warm apple slaw

Serve with the coleslaw and watercress.

500 g chicken sausages

4 red apples, sliced

125 ml (½ c) apple juice

300 g coleslaw mix

salt and pepper

watercress to serve

1                    Cut the sausage into equal size lengths and thread onto soaked skewers.

2                    Put the apple slices and juice in a microwave-safe bowl, cover with clingfilm and microwave on high for 1 minute or until the apples are tender. Stir in the coleslaw mix, cover and microwave for 1 minute or until the vegetables are wilted. Season with salt and pepper.

3                    Arrange the sausages in a flat plate and microwave on high for 5 minutes or until cooked through.
