Mince paella

This is a short-cut paella recipe that’s ready in a few minutes.

Serves: 4

Cooking: 20 min

15 ml (1 T) olive oil

2 cloves garlic, sliced

1 onion, chopped

500 g mince

250 ml (1 c) rice

500 ml (2 c) chicken stock

400 g can chopped tomatoes

handful coriander, chopped

  1. Heat the oil in a large frying pan over high heat. Add the garlic, onion and mince and cook for 5 minutes or until browned.
  2. Add the rice, stock and tomato, cover, reduce heat to low and cook for a further 15 minutes or until the stock is absorbed and the rice is al dente. Stir the coriander through.
