Mushroom and mango burgers

No need for vegetarians to feel left out on burger nights. Make a mushroom burger that even meat-lovers would envy.

Serves 4

20 g butter

3 cloves garlic, chopped

4 brown mushrooms, seasoned

4 burger rolls

2 handfuls rocket leaves

1 red onion, sliced

2 tomatoes

80 g Cheddar cheese, sliced

400 g tin mango slices

1. Melt butter in a frying pan over medium heat. Fry the garlic and mushrooms in the butter until almost cooked and set aside.

2. Slice the rolls in half and place the 4 bottom halves on a serving plate. Top the roll halves with rocket, onion, tomato, cheese, mushrooms and mango slices. Place the other halves of the rolls on top of the mango.

3. Serve immediately with *potato chips.
