Orange and chocolate bread and butter pudding

This is pure comfort in an ovenproof dish.

1 loaf cinnamon flavoured bread

50 g butter

125 ml (½ cup) cream

150 g white chocolate, finely chopped

3 eggs

60 ml (¼ c) caster sugar

500 ml (2 cups) milk

zest of 1 orange

Preheat oven to 180 °C.

  1. Spread the bread with butter. Arrange the bread slices, overlapping slightly, in an ovenproof dish.
  2. Place the cream in a saucepan over medium heat and cook, stirring, for 2 minutes or until heated through. Remove from heat. Add half the chocolate. Set aside for 2 minutes or until the chocolate melts and the mixture is smooth. Stir until combined. Set aside for 5 minutes to cool slightly.
  3. Whisk the eggs, sugar, milk and orange rind in a heatproof bowl until well combined. Add the chocolate mixture, whisking continuously, until combined. Pour over the bread and set aside for 10 minutes. Top with the remaining chocolate. Place the dish on a baking tray and bake for 35 minutes or until set.
