A superb pasta dish

200 g spaghetti

a handful of broccoli

100 g ham, cubed

Sauce

150 ml (? c) cream

1 egg, separated

60 g Parmesan cheese, plus extra to serve

salt and freshly ground pepper

5 ml (1 t) nutmeg

  1. Bring a large pot of salted water to the boil over a high heat, then add the spaghetti and cook until al dente. Add the broccoli to the cooking pasta for the last 5 minutes. Drain and set aside.
  2. Sauce Gently heat the cream in a frying pan on low heat. Mix the egg yolk and Parmesan together, then season well with salt and pepper. Pour the mixture into the heated cream while whisking.
  3. Using tongs, drop the pasta into the sauce and toss well, adding water until a smooth sauce is formed. Add the ham, sprinkle over the nutmeg and serve.
