Pepper steak quesadillas

A delicious lunch to make for yourself and your family

15 ml (1 T) olive oil

1 onion, thinly sliced

1 green pepper, thinly sliced

salt and pepper

10 ml (2 t) freshly ground black pepper

15 g butter

500 g tenderized steak, cut into strips

handful parsley, chopped

4 tortillas

200 g mature Cheddar, grated

100 g mozzarella, grated

Preheat the oven to 200 °C and grease a baking sheet.

  1. Heat the oil in a large pan over medium-high heat, add the onion, green pepper, salt and pepper. Cook, stirring occasionally, until the peppers and onions are softened and browned. Transfer into a bowl and set them aside.
  2. Return the pan to medium-high heat and add the butter. Add the steak, season with salt and the black pepper. Cook for 2 minutes or until cooked to your liking. Add the parsley and mix through.
  3. Heat each tortilla in a pan for a few seconds. Put 1 tortilla on the baking sheet, top with a layer of grated mixed cheese, an even layer of steak, and an even layer of the cooked green peppers and onions. Put a second tortilla on top, gently press down and repeat the process.
  4. Put in the oven and bake for 5 minutes or until the cheese has melted. Cut into quarters and serve.
