Pineapple and Chicken Kebabs

The tangy chicken and sticky sweet pineapple go together great in this recipe.

For the marinade you'll need:

30ml (2 tbsp) thick soy sauce

30ml (2 tbsp) lemon juice

45ml (3 tbsp) olive oil

Pinch of salt

For the kebabs you'll need:

6 chicken breasts, cubed

1 pineapple, peeled and cubed

6 - 8 kebab skewers

For the braai sauce you'll need:

30ml (2 tbsp) honey

2cm piece of fresh ginger, grated

10ml (2 tsp) thick soy sauce

5ml (1 tsp) lemon or lime juice

For the rice salad you'll need:

500ml (2 cups) cooked rice

125ml (½ cup) gooseberries, halved

1 green apple, diced baby spinach leaves (optional)

4 chives, chopped

30ml (2 tbsp) olive oil

15ml (1 tbsp) lemon juice

Salt and ground black pepper

Kebabs

Mix the marinade ingredients. Put the chicken in a bag and pour over the marinade. Fasten the bag and shake to coat the cubes. Marinate in fridge for 30 minutes. Skewer chicken, alternating with pineapple cubes.

Braai sauce

Mix ingredients. Braai kebabs over medium heat, basting with sauce.

Rice salad

Mix ingredients and serve with the kebabs.
