Pound cake

A basic pound cake is great to add to a trifle, or to enjoy plain at teatime.

Serves: 6

Preparation: 10 min

Cooking: 50 min

100 g butter, room temperature

250 ml (1 c) castor sugar

5 ml (1 t) vanilla essence

5 eggs

2,5 ml (½ t) salt

5 ml (1 t) baking powder

375 ml (1½ c) flour, sifted

Preheat oven to 180 °C. Grease a medium loaf pan.

  1. In a large bowl, beat the butter and sugar until very light and fluffy. Add the vanilla, and then gradually add the eggs, beating well and scraping the bowl as needed.
  2. Sift in the salt, baking powder and then gradually add the flour, beating well to combine and scraping the bowl as needed.
  3. Transfer the batter to a pan and bake for 50 minutes or until a toothpick inserted in the centre of the cake comes out with a few moist crumbs attached. Let cool in the pan on a wire rack. Remove the cake from the pan and let cool completely on the rack before slicing.
