Pulled chicken burger

30 ml (2 T) oil

1 onion, finely chopped

2 chillies, chopped

1 clove garlic, minced

250 ml (1 c) tomato sauce

45 ml (3 T) apple cider vinegar

15 ml (1 T) brown sugar

15 ml (1 T) paprika

15 ml (1 T) Worcestershire sauce

10 ml (2 t) chilli powder

2, 5 ml (½ t) cayenne pepper

salt and black pepper, to taste

4 chicken breast fillets

4 burger rolls

  1. Heat oil in a pan over medium heat. Add in the onion and chilli and fry until softened, stirring often. Add in the garlic and fry, stirring, for about 30 seconds or until fragrant.
  2. Stir in the tomato sauce, vinegar, sugar, paprika, Worcestershire sauce, chilli powder, salt and pepper until well mixed. Add chicken and stir to coat. Reduce heat to low and cook until chicken is fork-tender and easily pulls apart – about 1 hour. Using two forks, shred the chicken into the sauce and mix well.
  3. Cut open the rolls and fill them with the pulled chicken mixture.
