Quick pasta salad

This is a perfect meal to enjoy while chilling outside.

250 g spiral pasta, cooked

170 g tin tuna

½ onion, chopped

100 g cherry tomatoes, sliced

1 green pepper, chopped

250 g mozzarella cheese, grated

handful basil, chopped

Vinaigrette

handful parsley

handful basil

5 ml (1 t) dried thyme

2 garlic cloves, chopped

60 ml (¼ c) red wine vinegar

5 ml (1 t) honey

160 ml (? c) olive oil

salt and pepper

Cook the pasta in a large pot of salted boiling water until just tender then drain well. Cool the pasta under cold running water.

  1. Place the pasta and remaining ingredients in a large bowl and mix to combine.
  2. Vinaigrette: In a blender, mix the parsley, basil, thyme, garlic, vinegar and honey. Process until finely chopped. While processing pour in the oil in a steady stream until well incorporated. Season with salt and pepper and serve drizzled over the pasta.
