Recipe: Stuffed calamari

Calamari tubes are seldom tough and are delicious fried or grilled. They taste even better when stuffed with a cheese stuffing. Enjoy.

Preparation time: 20-30 min

Cooking time: 7-10 min

Serves 4

You will need

500 g calamari tubes, defrosted in cold water if frozen

Stuffing

6 slices brown bread, crumbed

125 ml (½ cup) Cheddar cheese, grated

2 rashes of chopped and fried bacon (optional)

60 ml (¼ cup) chopped sundried tomatoes in oil

1 red pepper or 6 red piquante peppers, diced

60 ml (¼ cup) chopped fresh parsley

45 ml (3 tbsp) olive oil

salt and freshly ground black pepper

lemon juice

Also need

45 ml (3 tbsp) butter

15 ml (1 tbsp) oil

2 cloves garlic, crushed

lemons, roasted peppers rocket leaves and dipping sauce to serve

Method

1. Clean the calamari tubes and dry them with paper towels. Mix all the stuffing ingredients together. Season with salt and pepper. Stuff the cubes and secure with a toothpick. Drizzle with lemon juice.

2. Heat the butter and oil and sauté the garlic for 1 minute. Fry the stuffed calamari tubes for about 2 minutes until cooked (they will turn white and no longer glassy). Remove one batch and continue until all the tubes are done.

3. Serve with extra lemon wedges, roasted peppers on a bed of rocket with a dip, sauce or creamy dressing of your choice.
