Sloppy joe

This is a quick, fuss-free meal and kids love it.

Serves: 6

Preparation: 5 min

Cooking: 30 min

30 ml (2 T) oil

1 onion, finely chopped

1 green pepper, chopped

2 garlic cloves, crushed

500 g beef mince

80 ml (? c) tomato sauce

400 g can tomato purée

250 ml (1 c) beef stock

15 ml (1 T) apple cider vinegar

15 ml (1 T) brown sugar

pinch cayenne pepper

salt and black pepper

4 crusty rolls

  1. Heat the oil in a pan over medium heat and cook the onion and pepper until soft. Stir in the garlic, then add the mince and increase the heat.
  2. Cook, stirring with a wooden spoon to break up the mince, until the meat changes colour.
  3. Add the remaining ingredients, stirring well. Reduce the heat, then simmer uncovered for 20 minutes or until the meat is tender. Season to taste.
  4. Cut open each roll and spoon mince in. Serve like a hamburger.
