  • 375 ml (1½ c) oat bran
  • 375 ml (1½ c) low-fat milk
  • 310 ml (1¼ c) self-raising flour
  • 125 ml (½ c) soft dark brown sugar
  • 10 ml (2t) cinnamon
  • 80 ml (1/3 c) low-fat margarine
  • 1 egg
  • 125 ml (½ c) finely chopped dates

Preheat the oven to 190 °C and line the hollows of a muffin tin with paper cups. Grease lightly with non-stick food spray.

Mix the oat bran and milk in a bowl and set aside for 15 minutes. Combine the flour, sugar and cinnamon in a bowl. Melt the margarine and beat it into the bran mixture with the egg.

Add to the dry ingredients and add the dates. Stir until the ingredients are just mixed. Spoon the mixture into the paper cups.

Bake for 20 to 25 minutes or until done. Cool on a wire rack and store in an airtight container.
