Sugar-coated loaf

375 ml (2 ½ c) self-raising flour

5 ml (1 t) cinnamon

2,5 ml (½ c) ground ginger

250 g butter, melted

250 ml (1 c) brown sugar

125 ml (½ c) maple syrup

3 eggs

115 g granadilla pulp

10 ml (2 t) cinnamon

125 ml (½ c) castor sugar

Preheat oven to 180 °C. Grease two medium loaf pans.

  1. Place the flour, cinnamon and ginger in a bowl and mix to combine. Add the butter, brown sugar, maple syrup, eggs and granadilla and mix well to combine.
  2. Spoon into bread tins. Bake for 50 minutes or until cooked when tested with a skewer. Turn out immediately.
  3. Place the extra cinnamon and sugar in a bowl and mix to combine. Coat the cake in the sugar and allow to cool.
