Tomato, pasta and mussels – what’s not to love?

Tomato pasta with mussels

Serves: 6

Preparation: 10 min

Cooking: 20 min

15 ml (1 T) olive oil

1 onion, chopped

1 garlic clove, chopped

5 ml (1 t) paprika

100 g chorizo sausage, sliced

400 g can chopped tomatoes

1 L chicken stock

300 g spaghetti, broken into large pieces

240 g pack frozen mussels, defrosted

handful parsley, chopped

lemon wedges to serve

1. Heat the oil in a large frying pan, then fry the onion and garlic over medium heat for 5 minutes until soft. Add the paprika and chorizo and fry for a few minutes. Add the tomatoes and the chicken stock, then bring to the boil.

2. Turn down the heat to a simmer, stir in the pasta and cook for 8 minutes, stirring occasionally to keep the pasta from sticking together. Stir in the mussels, cook for 3 minutes until it’s all heated through and the pasta is cooked, then season to taste.

3. Sprinkle with parsley and serve with lemon wedges.
