Top­deck chocolate brownies

Sometimes you need something ridiculously chocolatey to get through the week

Makes: 12

Preparation time: 15 min

Cooking time: 45 min

Brownie

100 g chocolate, finely chopped

250 g butter, at room temperature

500 ml (2 c) brown sugar

4 eggs

10 ml (2 t) vanilla essence

250 ml (1 c) flour

Cookie dough

160 g butter

180 ml (¾ c) brown sugar

180 ml (¾ c) caster sugar

45 ml (3 T) milk

7 ml (1½ t) vanilla essence

375 ml (1½ c) flour

70 g chocolate chips

Preheat oven to180°C. Line a pan with enough foil to hang over all four sides. Grease the foil.

  1. Brownie: In a glass bowl, melt the chocolate in the microwave, stirring after every 30­ second interval, until melted and smooth. Set aside to cool slightly.
  2.  In a large mixing bowl, mix the butter and brown sugar until light and fluffy. Beat in the eggs and vanilla.
  3.  Mix in the melted chocolate until combined. Add the flour and mix just until combined (don't overmix). Spread the batter into the prepared pan. Bake for 30 minutes, or until almost cooked through.
  4. Cookie dough: In a medium bowl, use an electric mixer on medium speed to combine the butter and both sugars. Add the milk and vanilla and mix until combined. Mix in the flour just until combined. Using a rubber spatula, stir in the chocolate chips.
  5. Spread the cookie dough over the brownie base. Bake for 15 minutes or until a toothpick comes out clean. Cool and refrigerate until the dough is firm, about an hour. Use a sharp knife to cut the brownies.
