Try this delectable veggie bake

Don’t struggle with children who don’t want to eat vegetables. Simply prepare this deliciously cheesy veggie bake and watch your family lick their lips. Toddler fingers will want to keep picking at the beautiful cherry tomatoes and teens will enjoy the ricotta taste.

Serves 4

You’ll need:

  • 40 g butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 500 g spinach, shredded
  • salt and freshly ground black pepper
  • 200 g ricotta cheese
  • 100 g feta cheese, crumbled
  • 5 eggs, whisked
  • juice and rind of small lemon
  • 250 g cherry tomatoes

Do this:

1 Preheat the over to 200 °C and grease a medium ovenproof dish with oil or nonstick spray.

2 Heat the butter in a large frying pan and fry the onion and garlic until soft and fragrant.

3 Add the spinach, stir and cook for about 5 minutes. Season with salt and pepper and allow to cool slightly.

4 Mix the cheeses, eggs, lemon juice and rind in a large bowl and stir the spinach into the mixture.

5 Spoon the mixture into the ovenproof dish and bake for 15 minutes or until set. Arrange the tomatoes on top and bake for another 5-10 minute or until cooked.
