You’ll need:

  • 6 hot cross buns, torn into chunks
  • 1 Madeira loaf, torn into chunks

  • 100 g butter, melted
  • 6 eggs
  • 250 ml (1 c) caster sugar

  • icing sugar and cinnamon to dust

Do this:

1 Grease an ovenproof dish.

2 Arrange the hot cross buns in the dish, top with the Madeira cake pieces then the banana bread.

3 Whisk together the butter, eggs, caster sugar, cream, milk, zest and vanilla until well combined. Pour over the torn cakes and press the mixture down.

4 Allow to stand for 1 hour to soak up the custard.

5 Preheat the oven to 180 °C.

6 Bake for 1 hour or until set. When cooled, dust with sugar and cinnamon.
