It’s been a long day and you’re so tired you can hardly think straight. Who still has time to hang around the kitchen for hours? Here’s a quick and easy recipe that won’t just make the little ones in your family happy, it will also fill your home with the most delicious flavours and the rest of the family will also be left licking their lips.

  • Serves 4-6
  • Preparation time: 15 min
  • Baking time: 20 min

You’ll need:

  • 500 ml (2 c) pap
  • 200 g soft mozzarella cheese, thinly sliced
  • 200 g boerewors, sliced into small pieces and cooked
  • 250 g baby tomatoes
  • 2 cloves garlic, crushed
  • 60 ml (¼ c) olive oil
  • salt and freshly ground pepper
  • handful of rocket
  • 45 ml (3 T) balsamic reduction

Do this:

  1. Preheat the oven to 190 °C.
  2. Cook the pap according to the packet instructions. Immediately turn the hot pap into 4 well-oiled 20 cm pizza pans or springform cake pans or onto a rectangular baking tray. Spread into an even layer – if it’s too thick use a metal spatula dipped in boiling water.
  3. Top the pap with the cheese, sausage pieces and tomatoes. Mix the garlic and oil and drizzle over the pizza. Season with salt and pepper.
  4. Bake for 20 minutes or until slightly browned and the tomatoes are wrinkly. Serve immediately, garnished with rocket and drizzled with the balsamic reduction.
