Tuna tomato pasta

300 g pasta shells

15 ml (1 T) oil

4 garlic cloves, chopped

handful of fresh parsley, chopped

400 g whole cherry tomatoes

salt and pepper

20 g butter

2 cans (170 g each) tuna in oil

1        Cook the pasta in a large pot of boiling salted water until just done. Drain and set aside.

2        Heat the oil in a frying pan over medium heat. Add the garlic and parsley and cook for 1 minute or until fragrant.

3        Stir in the tomatoes and season with salt and pepper. Cook over low heat for 10 minutes or until the sauce has thickened.

4        Stir in the butter and tuna, cook for 1 minute then stir in the cooked pasta.
