Vegetable Bake with Championship Boerewors

Perfect as a side dish or a starter, this tasty boerie and veggie bake will have everyone coming back for seconds! 

Serves: 4 - 6

Preparation time: 15 mins

Cooking time: 40 mins

You'll need:

1 pack Championship Boerewors, broken into pieces

A few rashers of bacon

1 container brown mushrooms, wiped with a damp cloth

1 container baby marrows, cut into pieces

A few garlic cloves, crushed

250g whole baby potatoes, scrubbed

Olive oil

1 container (250g) cream cheese

Chopped chives or spring onions

Preheat the oven to 190 ºC. Grease an oven pan. Wrap a piece of bacon around each piece of boerewors. Drizzle the potatoes with olive oil and place in the pan in a single layer. Arrange the boerewors pieces inbetween and bake in the oven for about 40 mins or until done. Stir, then add the baby marrows and mushrooms. Place the cream cheese on top of the mushrooms. Bake for another 10 mins until slightly browned and the vegetables are tender. Sprinkle with chives and serve hot.
