Vegetable soup for the whole family

Do your kids refuse to eat vegetables? This fantastic veggie soup is bound to take care of that little problem. It is perfect for young and old – it can also be blitzed with a stick blender for babies older than 9 months. The recipe is quick and easy.

Do your kids refuse to eat vegetables? This fantastic veggie soup is bound to take care of that little problem. It is perfect for young and old – it can also be blitzed with a stick blender for babies older than 9 months. The recipe is quick and easy.

Serves 4-6

You’ll need:

  • Oil for frying
  • 250 g bacon or smoked ham, roughly chopped
  • 1,5 litres vegetable stock
  • 4 celery stalks, roughly chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 1 sweet potato, diced
  • 1 can (400 g) butter beans, drained
  • Salt and freshly ground black pepper
  • 30 ml finely chopped parsley
  • Olive oil
  • Grated Parmesan cheese

Do this:

  1. Heat the oil in a large saucepan and fry the bacon or ham for a few minutes or until cooked and fragrant.
  2. Add the vegetable stock to the mixture.
  3. Add the celery, onion, carrots and sweet potato and bring the mixture to the boil.
  4. Reduce the heat, cover and simmer for about 20 minutes.
  5. Add the butter beans and simmer for another 10 minutes.
  6. Season with salt and pepper.
  7. Blitz the soup with a stick blender until chunky.
  8. Add the parsley and ladle the soup into bowls.
  9. Top off with Parmesan.
